Smoked pork is a traditional dish of the ethnic minorities in the highlands of Cao Bang. The meat is selected from firm-fleshed local pigs, marinated with spices, and then hung above the kitchen hearth to be smoked for an extended period.

The natural smoking process dries the meat on the outside, keeps it tender on the inside, and gives it a distinctive aroma of forest wood smoke. When eaten, the meat is usually grilled again, shredded, and dipped in a spicy and salty sauce, creating a rich, rustic flavor that reflects the unique character of the highlands.
