Lien Dong Five-Colored Noodles are a handcrafted, naturally colored (five-color) dried noodle product from Cao Bang, produced by Lien Dong Dried Noodle and Pho Factory, which has received OCOP 3-star certification. They use no artificial colors or additives, utilize local ingredients, and are distributed nationwide.

The five-colored dried noodles in Cao Bang are made from locally grown dwarf Bao Thai rice along with natural ingredients such as perilla leaves, gac fruit, moringa, butterfly pea flowers, etc., to create the attractive colors.

About 7 years ago, she began researching local perilla leaves to create purple noodles.

As for corn noodles, this is a unique noodle dish found only in Cao Bang. Locally sourced, evenly sized, firm corn kernels are essential for a fragrant flavor and beautiful yellow color. The dried corn is then ground and soaked overnight. Next, the corn is finely ground and mixed with rice flour. This mixture is then put into a mixer, water is added, and the mixture is pressed into a noodle press to produce the finished product.

Cẩm noodles, gấc noodles, moringa noodles, and butterfly pea flower noodles are made from dwarf Bao Thai rice grown in Cao Bang. Cẩm leaves and butterfly pea flowers are boiled to extract the liquid, which is then used to soak the rice flour, or the rice is mixed with gac fruit to create the red color.

Most notably, there is brown rice noodles made from naturally sticky and delicious red brown rice, which is very good for people with diabetes or those who want to lose weight and diet.

After being pressed, the noodles are cut into bundles 70-80 cm long and dried. They are then left overnight in an oven to loosen them, preventing them from sticking together when untangled. The next morning, the noodles are dried in a shaded area for 3-5 days. Note that if the weather is very sunny or windy, a tarp should be used to cover the noodles to prevent them from becoming brittle and breaking during long-distance transport.

When drying, the colorful rice noodles create a vibrant scene resembling ribbons of silk, attracting tourists to visit and take photos.
